Meatless Mondays – Amy’s Kitchen: Macaroni and Cheese made with Organic Pasta
I love Amy’s Organic meals. They are a fast and easy way to indulge in a tasty, healthy bite. Amy’s Mac n Cheese made with organic pasta is a great option when you’re craving comfort food.
This isn’t the healthiest Amy’s entree, but its a whole lot better than homemade Mac N Cheese or Velveeta. In usual Thick N Fit fashion, we decided to spruce up this pre-made meal by adding tomatoes and a little bit of pepper.
End result is a cheesy, delish dish with a little bit of spice from the pepper and a nice crunch from the fresh tomatoes. Some other additives that will take this Mac N Cheese from boxed goodness to dinner sensation are spinach, onions, a dash of salt and if you’re brave a splash of hot sauce ( cayenne pepper based hot sauce that is).
Amy’s Organic also makes Macaroni & Soy Cheeze, Dairy Free Rice Macaroni & Cheeze, Light in Sodium Macaroni & Cheeze, & Rice Mac & Cheeze. Haven’t tried all of the varieties yet, but the original Mac & Cheese has set the bare pretty high.
